Jelly: pork is rich in vitamins, chicken will prevent weight gain

Jelly is one of the most popular winter dishes, including on the New Year’s table. The Office of Rospotrebnadzor in the Penza Region told why it is useful and who should not abuse it.



Experts recalled that aspic (jelly) is prepared on the basis of concentrated broth. It is useful for diseases of the joints and musculoskeletal system, increases hemoglobin, strengthens the immune system and eyesight.

Useful qualities depend primarily on the type of meat. For example, beef and pork jelly contains a lot of vitamin A, which is necessary for maintaining eye health, the immune system and protein synthesis. It also contains B vitamins (especially B12 and B3), as well as valuable macro- and microelements: cobalt, potassium, magnesium, sodium, phosphorus, iron and others.

However, aspic will not benefit those who suffer from diseases of the gastrointestinal tract, liver, and gout.

In addition, jelly is very high in calories and can exacerbate overweight problems. The highest rate is for pork aspic, about 350 kcal per 100 g of product; for beef, it is lower – about 209 kcal per 100 g.

“If you want to get a dietary product, you can replace pork and beef with turkey or chicken. Then the figure will be about 84 and 136 kcal per 100 g, respectively. On the other hand, you will not get such a wealth of vitamins and minerals,” experts explained.

The press service of the department provided a recipe for chicken aspic. For 1 kg of meat (legs, wings, legs, brisket, cartilage) you need 5 cloves of garlic, 1 onion, 1 carrot, spices (sweet pepper, black pepper, paprika, bay leaf), salt to taste and herbs.

Bring the chicken to a boil, drain the water, rinse it, fill it again, add the spices and put it back on the stove. As soon as the water boils, reduce the heat and leave it to simmer under the lid.

Cut the washed vegetables into large pieces, add them to the chicken, add salt to the water. After 3 hours, get the meat and carrots, drain the broth.

“Separate the chicken from the bones and cut it into small pieces. Place an even layer of meat on the bottom of the molds, carrots on top; if you wish, you can add greens or boiled eggs. Fill with the broth and chill. Serve with horseradish or mustard,” the department concluded.
