The main traditional New Year’s dish is, of course, salad. You can still imagine a holiday without hot water, but not without Olivier and champagne. You can quickly make vegan mayonnaise yourself based on aquafaba, a liquid from cans of canned beans, peas or chickpeas. You can also use water after boiling the beans. Add sugar, salt, vinegar, lemon juice to 200 ml of aquafaba and blend with a blender. During the whipping process, mix 350-400 ml of vegetable oil.

Hotter

Meat or fish are not necessary as a hot dish. Dishes with legumes are no less satisfying. Try making lobio – the garlic, cilantro, pomegranate seeds and walnuts in the composition make the dish spicy and quite New Year’s Eve.

Any variations of dishes with the addition of falafel are very tasty — small chickpea meatballs and tahini fried in oil. They can be added to salads, served as a main course with a side dish, or wrapped in lavash with vegetable fillings. Thanks to cumin, falafel gives the dish an oriental touch.

Lenten pies can be prepared as a hot cake. Roast onions and carrots, add tomato paste, mushrooms, tomatoes, boiled lentils, broth and simmer. Then place in a baking dish, with a layer of mashed potatoes on top. You will get a vegan variation of shepherd’s pie, which is quite rich in protein.

Snacks

Vegan snacks are much easier than other dishes: serve any variation of vegetables cooked with different sauces. To make it more interesting, make vegetables in the style of cuisines from different countries. For example, Korean variations are good: carrots, asparagus, kimchi cabbage. Even those who consider vegetables to be fresh will definitely like snacks.

If you find special cakes in the store, you can make Mexican tacos with vegetables. The main ingredients — corn, cabbage and beans — can be found in almost every kitchen. The dish is prepared quickly and easily, but it turns out spectacular even for the New Year’s table.

Peppers can be used to make a Spanish snack. To do this, brown small green peppers in a hot frying pan and salt with coarse sea salt. Eat whole, holding your tail, and eat fresh bread or lavash.

You can also surprise guests with an appetizer from the Balkan cuisine — ajvar. To do this, bake red bell peppers and eggplants on the grill or in the oven. If you have a gas stove and don’t have a grill, you can put eggplants and peppers directly on the burners — this will give them a spicy haze flavor. Just remember to peel them off after baking, eating black crust is bad for your health. Grind the vegetables in a blender with toasted onions and garlic. Serve ajvar on slightly dried bread.

It’s not certain that you will have room in your stomach after such a hearty dinner, but you can make a couple of desserts for a vegan table. A win-win option is baked apples, pears or quince, sprinkled with honey and decorated with nuts. This dessert seems boring compared to store-bought cakes, but in fact it turns out to be no less tasty.

If you want something starchy, then take a closer look at Lenten baking recipes, for example, muffins and strudel will definitely please everyone. You can make them a little less sweet than the recipe to reduce calories. Just avoid options that use margarine – because of harmful trans fats, it is better to exclude its use.
